Would You Drink Milk Made By Artificial Intelligence?

Artificial intelligence can be used for so many different things, but its latest use is for creating dairy and meat free foods. The tech-food company NotCo has been using AI software to create vegan alternatives that replicate actual meat and dairy products to give a more satisfying taste that the usual plant-based alternatives. The latest product in question is NotMilk, unlike other plant milks NotMilk replicates cow milk in terms of taste and texture.

The milk is created with an understanding of what cows milk is on a molecular level – the AI essentially tried to copy this distinct information with plant-based products creating a copy. The company has an algorithm that can analyze plant ingredients and how they behave molecularly and uses this to construct an accurate recipe. Interestingly, the NotMilk ingredients include cabbage juice concentrate and pineapple juice concentrate – we can’t imagine how this tastes, but you have to trust the science here.

Some vegans avoid products that replicate dairy, however if you’ve been missing real milk this is good news for you! NotCo is backed by Amazon CEO Jeff Bezos, so the company and it’s products are surely soon to explode. NotCo is known as the ‘Impossible Foods’ of Latin America, where they also sell plant-based ice cream and meat. CEO Matias Muchnick is on a mission to provide alternatives that don’t fall short when it comes to taste.  Perhaps it’ll be in your coffee soon!
