8 Summer Recipes That Are As Delish As They Are Easy!

Let’s face it—cooking in the hottest months of summer sucks. It’s so blistering hot that the last thing we want to do is turn on the stove, let alone crank on the oven. So, to compensate for our lack of kitchen use, we end up eating out way too much and opting for a nauseating amount of salads.

Leafy greens are great and all, but after a point, our stomachs just want something more. And that’s where our alternative summer recipes come in. They don’t feel heavy, which makes them perfect for hot heather. But the best part is that they’re not a boring salad you’ve eaten too many time already. #1 Avocado Toast with Fried Cheese

Ingredients

  • 2 slices grainy bread
  • 1 avocado, mashed with salt and pepper
  • ¼ cup cubed, cooked eggplant
  • 6 pieces of homemade paneer

Instructions

1. To assemble, toast the bread and slather each piece with mashed avocado.
2. Cook off the paneer until golden on all sides.
3. Top the avocado toast with fried paneer and cooked eggplant.

 

#2 Classic tomato salsa

Ingredients

  • 6 ripe tomatoes
  • 1 big bunch of fresh coriander
  • 1 onion
  • 2 fresh jalapeño or green chillies
  • 1 large clove of garlic
  • 1-2 limes
  • extra virgin olive oil

Instructions

1. Finely chop the tomatoes and coriander (stalks and all) and place into a large bowl.
2. Peel and finely chop the onion, deseed and finely chop the chillies, then scrape into the bowl. Peel and finely grate in the garlic.
3. Squeeze in the juice from 1 lime, add 2 tablespoons of extra virgin olive oil, and mix well. Season to taste with sea salt, black pepper and more lime juice, if needed.
4. Serve straight away or cover and set aside for a few hours to let all those flavours develop.

 

#3 Simple guacamole

Ingredients

1. In a medium mixing bowl, add the diced avocados and mash with a fork until smooth but still chunky.
2. Add the cilantro, chile, lime juice and onion and mix to combine.
3. Season with salt.
4. Serve with tortilla chips or fresh veggies, etc.

 

#4 Chocolate avocado frosty

Ingredients

  • 1/2 cup of frozen banana slices
  • 1 cup of chocolate milk 
  • 1/2 avocado

Instructions

1. Place everything into the jar of a blender
2. Cover and pulse until smooth
3. Pour into glass, and freeze at least 45 minutes

 

#5 Watermelon popsickles

Ingredients

  • Half of a seedless watermelon
  • Popsicle sticks

Directions

1. From your watermelon, cut off one half moon of a slice about 3/4 inch thick. Trim off the rind, poke off any pale seeds that are showing and then cut the slice into 3-4 triangles.
2. Lay one triangle of watermelon on a cookie sheet. Slide a popsicle stick in at least halfway 
3. Repeat with remaining watermelon until you have as many popsicles as you'd like (note that they can't be touching while they freeze or they become hard to break apart. So only make as many as you have space for on cookie sheets in your freezer).
4. Spread the slices out on the cookie sheet so that they're not touching. Freeze on the cookie sheet for 3-4 hours, until frozen through.
5. Eat or wrap watermelon popsicles individually in plastic wrap and return them to the freezer where you can keep them for 5-7 days.

 

#6 Banana Sushi

Ingredients

  • 1 medium banana
  • 1 tablespoon nut butter (any kind will work!)
  • Optional toppings: chopped nuts, chia seeds, shredded coconut

Instructions

1. Peel banana and then spread on 1 tablespoon of nut butter.
2. Sprinkle on optional toppings and press them lightly into the nut butter to ensure they will stick.
3. Using a sharp knife, evenly slice banana into “sushi” pieces.
4. Enjoy right away or transfer onto a baking sheet and freeze for later!

 

#7 Prosciutto and Cantaloupe Appetizers

Ingredients

  • 1- 3 oz package prosciutto
  • 1 cantaloupe
  • 5 basil leaves
  • Black pepper

Instructions

1. Cut cantaloupe into but sized pieces.
2. Roll each slice of prosciutto into 2 or 3 pieces.
3. Place a pick into each piece of prosciutto, then into cantaloupe.
4. Add basil and sprinkle on top and add black pepper.


#8 Sriracha Hummus

Ingredients

  • 1 (14.5 ounce) can garbanzo or cannelloni beans
  • ½ cup tahini
  • ¼ cup extra virgin olive oil
  • 1 clove garlic, minced
  • 2 tablespoons fresh squeezed lemon juice
  • 2 tablespoons water
  • ¼ cup Sriracha or more to taste
  • Sea salt and pepper to taste

Instructions

1. In a food processor, puree the beans, tahini, garlic, olive oil, lemon, water and Sriracha.
2. Season with salt and pepper to taste.
 2a.Add more Sriracha if desired.
